FIELD: food-processing industry, in particular, production of equipment for breaking great quantity of eggs and separation thereof into fractions.
SUBSTANCE: apparatus has bed, two parallel shafts located on bed, elastic disks and rigid disks with knives and egg receptacles, said disks being mounted on parallel shafts for rotation in opposite directions. Pressure roller is positioned in plane of arrangement of parallel shafts, symmetrically with respect to rigid disks. Additional rollers are provided between each pair of elastic and rigid disks in upper and lower parts of apparatus for cooperation with elastic disks. Apparatus of such construction allows eggs of various sizes to be broken.
EFFECT: increased efficiency, wider operational capabilities and provision for breaking great quantity of eggs without damaging of yolk enclosure.
