FIELD: food processing industry, in particular food supplement production.
SUBSTANCE: claimed method includes root crop inspection and washing, followed by treating thereof with live steam under pressure of 0.8-0.9 MPa for 1-1.5 min. Then root crops are crushed and simultaneously blanched. Crushed mass is acidified with citric acid to pH 3.5-4.0 and pressed to release juice. Juice is concentrated under 0.075-0.076 MPa at 65-70°C.
EFFECT: accelerated method; target product of improved quality.
