FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to food semi-cooked items production. Root vegetables of white beet are washed. They are blanched in water at 95-100°C during 15-20 minutes. After that, peeling and blending till particle sizes not more than 5 mm is performed. 0.2-0.3% of citric acid is added to blended product, the mass is mixed and pressed. After that water at 80-85°C is added to pressed mass with the water duty 1 and mixed during 15-20 minutes. After that repeated pressing is performed. Water at 80-85°C with the water duty 1 is added again to the pressed mass. Boiling and stirring is performed during 60 minutes. After that obtained mass is milled till particles size 30-40 micron. Puree is preserved and packed with dry solids content 5-10%.
EFFECT: invention allows to obtain high quality product, rich of mineral substances and food fiber.
