FIELD: food-processing industry, in particular, production of infant foods.
SUBSTANCE: method involves sieving groats; directing through magnetic catcher and washing; extracting dry Mortierella nigrescens micromycet biomass with the use of non-polar extractant such as carbon dioxide or hexane in above-critical state; separating first extract from biomass; sequentially extracting biomass with water, acid, water, alkaline, water, acid, and water; upon accomplishment of said procedures, joining solid residue with first extract for producing of preparation; introducing receipt amount of pectin into receipt amount of water and holding until pectin is swollen and solved and 0.5-1.5-% solution is produced; filtering said solution; mixing pectin solution with preliminarily prepared groats in the ratio of 1:10; cooking groats to dry substance content in groats of about 11.5 wt%; introducing therein fruit and vegetable pulp in an amount of from 30% to 50% and biomass preparation in an amount of 0.01-0.02% by weight of mixture to be produced; mixing, homogenizing and drying mixture. In case drying process different from spraying drying process is used, dried mixture is subjected to grinding to powdered state and sieved. Method allows quality of base product to be improved owing to the fact that it is readily reduced with water to homogeneous pulp-like consistency, does not form agglomerates and does not cake during storage in unsealed package for a week at air humidity of up to 76%. Infant food mixture is recommended as food for babies of from 3.5 month age.
EFFECT: provision for obtaining of infant food possessing therapeutic and prophylactic properties characteristic of products with increased pectin content, such as hypoallergenic effect.
