SUBSTANCE: invention relates to producing foodstuffs from fruit-vegetable raw. For preparing frozen dessert fruit-vegetable raw is inspected, milled and granulated sugar, carragheenan and a solid residue obtained after extraction of micromycetus Mortierella elongata biomass by the known technology are added. The mixture is stirred at heating with simultaneous inactivation of native enzymes, cooled and micelle separated after the first extraction stage of micromycetus Mortierella elongata biomass with liquid carbon dioxide is added followed by pressure drop to atmosphere value for preparing the end frozen product. Invention provides decrease energy consumption in manufacturing and declining accumulation of melanoides in the end product.
