FIELD: meat industry.

SUBSTANCE: method involves softly cutting recess transverse to animal's highly tightened skin, muscular tissue, trachea, esophagus, jugular veins and cephalic artery; keeping animal for 2-3 days in pan and feeding only with fodder feeds without water; performing mentioned procedures in safety corridors and attracting animal by kind treatment and feeding slightly salted sweet water; washing animal by means of shower equipment with warm water; restricting animal's actions by mounting bars forward, rearward and behind knee joint of fore and hind limbs; putting U-shaped yoke with support onto neck part of animal's head. Procedures for cutting of mentioned organs are carried out by operator standing behind fence. Method further involves suspending bleeding animal's body with its portions above hind limb knees in hooks of crane mechanism and transferring animal's body to zones wherein skinning, removal of interiors and cutting of carcass into parts are performed.

EFFECT: improved quality of meat products.
