FIELD: food processing industry.
SUBSTANCE: smocking liquid is produced by extraction of coal cuts with extractive solvent in supercritical and/or liquid state. Coal is obtained from wood or cellulose preferably by pyrolysis. Solvent is selected from CO2, propane of mixture thereof, and solvent in supercritical state is selected from CO2, propane, methane, ethylene, ammonium, methanol, water and mixtures thereof. Obtained extract is useful in production of foodstuffs, in particular smocked fish products such as salmon, herring, mackerel, or trout. Product is obtained by application or injection in fish meat of such extract followed by packing in polymeric film and treatment in microwave oven.
EFFECT: economy method for production of safe product with acceptable smocked taste.
