FIELD: food-processing industry, in particular, production of juices from citrus fruits.
SUBSTANCE: apparatus has lower and upper bowl-shaped members arranged one under another. Bowl-shaped members are positioned for movement with respect to one another in vertical plane for squeezing of whole citrus fruits therebetween. Apparatus is further provided with upper and lower cutting members, tubular filter positioned under lower bowl-shaped member, and tubular piston positioned within tubular filter. Tubular filter is provided with plurality of circumferential slots defining continuous and open zones on at least part of length of said filter, with continuous and open zones having predetermined ratio of their areas. Method involves placing and squeezing fruit between lower and upper bowl-shaped members; separating peel; forcing fruit internal portion into tubular filter; extruding juice and juice-containing fibers through slots into juice collecting reservoir. Method allows high-quality juice to be produced with increased amount of undamaged flesh.
EFFECT: improved quality of juice and increased efficiency in extracting of juice and juice-containing fibers.
