FIELD: food processing industry.

SUBSTANCE: claimed method includes treatment of preliminary prepared ground raw materials with ultrasound with power of 0.3 W/cm2. Then raw materials is treated with 0.001-0.01 % solution of hydrolytic enzyme preparation at 35-55°C for 20-35 min in raw materials/enzyme preparation solution ratio of 1:10 calculated as dry matter. After hydrolysis enzymes are inactivated, colorants are extracted from obtained hydrolyzate with 40-80 % ethanol solutions fro 60-80 min at 40-50°C in of preliminary prepared raw materials/extractant ratio of 1:10 calculated as dry matter. Obtained product is stabilized with Hypoxen in amount of 0.0001-0.0005 % and ascorbic acid in amount of 0.001-0.01 % calculated as dry matters in filtrate and concentrated up to dry matter content of 65-80 %.

EFFECT: simplified and environmental friendly method of increased yield, colorant of improved quality.
