FIELD: food industry.
SUBSTANCE: invention relates to technology of producing food coloring agent from grapes processing wastes. Disclosed is a method of producing an enocolorant, involving mixing plant material with the active substance, extraction, filtration and concentration. Vegetal raw materials are represented by non-fermented sweet pomaces of dark colored grapes. Active ingredient is pectolytic enzyme preparation LALLZYME EX-V in amount of 0.002 % of refuses weight. Obtained mixture is thermostatically controlled for one hour at temperature of 37–40 °C and pH=3.5–4, staining is carried out with 96 % ethanol solution at temperature of 50–60 °C with subsequent enocolorant filtering and concentration.
EFFECT: invention promotes complete extraction of coloring substances and ensuring stability of the obtained extract.
