SUBSTANCE: method involves wetting in milk and cutting wheat bread; cutting mutton; mixing said components with edible salt and black bitter pepper to produce cutlet farce; cutting and slightly frying bulb onion in melted fat; boiling, cleaning and cutting part of eggs; cutting parsley greens; mixing bulb onion, cut eggs and parsley greens for producing of farce; providing layer-by-layer placing of cutlet mass and farce; rolling; oiling with remained part of eggs; dusting with wheat breadcrumbs and frying for producing of rolls; obtaining garnish by shredding and freezing of fresh cabbage and mixing it, without oxygen access, with edible salt; packaging ready rolls, garnish and melted fat; pressurizing and sterilizing.
EFFECT: improved quality and increased digestibility of rolls.
