FIELD: milk industry, in particular, production of food additive used as sweetener.
SUBSTANCE: method involves drying stevia leaves to weight part of dry substances of 97.8-98.4%; grinding to particles size of 0.71-1.5 micron; extracting and centrifuging; using curd whey ultrafiltrate as extractant; providing two-staged extraction process while continuously mixing in vibratory mixer: first stage including extraction of physiologically valuable components using curd whey ultrafiltrate from stevia leaves, and second stage including extraction of physiologically valuable components from remained pomace at extraction time of 30-40 min, temperature of 30-50 C, pH of extractant of 4-6, with volume ratio of solid phase - stevia leaves or pomace and liquid phase - ultrafiltrate of curd whey r=1:6-1:12; separating extract from pomace by centrifuging process; condensing resultant extract with weight part of dry substances of 7-9% in reverse osmosis unit until dry substance weight part is 18-23%; pouring ultrafiltrate of curd whey onto pomace and, after extracting, separating extract from pomace by centrifuging process; condensing resultant extract with weight part of dry substances of 5-7% until weight part of dry substances is 15-17%; mixing extracts; pasteurizing at temperature of 72-74 C; holding during 10-20 s and cooling to 2-6 C.
EFFECT: increased efficiency in extraction of nutritive substances and intensified process for producing of extract from stevia leaves.
