FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Stevia leaves are washed, dried till dry substances weight fraction is equal to 93-94% and milled into particles sized 1 - 1.5 mm. Extraction is performed (under continuous stirring conditions) in the vibromixer in the following way: physiologically valuable components of stevia leaves are extracted with cheese whey UF-concentrate during 40 minutes at a temperature of 40°C, the extragent pH being 6.0-6.7, the ratio of stevia leaves to cheese whey UF-concentrate being 1:10. The extract is separated from pulp by way of centrifugation. One produces an extract with dry substances weight fraction equal to 17-19%. The extract is pasteurised at 72-74°C, maintained during 10-20 sec. and cooled to 2-6°C.
EFFECT: method ensures obtainment of a product with increased biological value; the method involves no additional operation for sustaining high colloid stability of the produced disperse system in case of its further usage.
