FIELD: food-processing industry, in particular, wafer production.
SUBSTANCE: method involves proofing blocks of fatty component at temperature of 20-25 C during 18-24 hours; plasticating fatty component in kneading machine having Z-shaped blades at rotational velocity of 14-30 rev/min until homogeneous plastic mass is produced, said mass having density of 750-850 kg/m3; mixing fatty component in kneading machine with sand sugar or sugar powder and other receipt components at rotational velocity of blades of 70-80 rev/min until mass density reaches 740-800 kg/m3; feeding ready filler immediately after preparing thereof into funnel of spreading machine; feeding filler from spreading machine onto wafer sheet and uniformly distributing filler thereon; forming sheets of semi-finished wafer product; cutting into individual products; charging into containers and packaging.
EFFECT: improved quality of wafers by keeping structural and mechanical properties during storage.
