SUBSTANCE: candy composition contains sugar syrup, sugar and powder of dried and ground walnut leaves, said components being used in the following ratio, wt% sugar syrup 10-25; powder of components of dried and ground walnut leaves 0.5-5.0; sugar the balance. Method involves producing sugar syrup from sugar, water and sugar syrup; evaporating and aerating resulted syrup; tempering fondant cream; forming resulted mass by pouring into starch; structuring; providing air blowing and glazing with chocolate glaze; introducing powder of dried ground walnut leaves into sugar-fondant cream syrup.
EFFECT: improved and novel structural-mechanical properties of ready product allowing it to be used in prophylactic feeding.
