FIELD: foodstuff.
SUBSTANCE: processing of lumpy all-beef is carried out in the device of chamber type by infrared rays with a density of a radiant stream 8-12 kW/m2 during 12-15 minutes till temperature achievement in the steak centre to 98-100°C. Ready-to-serve meat is cooled and slashed. Muscular tissue degreasing is carried out with acetone within 1-2 minutes. Then homogenization and filtration are made, a precipitate repeatedly is processed with acetone and slashed to a pulverous state. The received powder is pressed for giving of various forms.
EFFECT: received meat powder has a high biological value and a long storage time in hermetically sealed packing.
