FIELD: food products.
SUBSTANCE: invention is related to the food industry, mainly chopped meat semi-finished products with beef powder. The method includes mechanical beef deboning, mincing the meat raw material, preparing farce and adding beef powder to the meat raw material, chopped onion, black and white pepper, egg melange, vegetable oil. Then meat semi-finished product is formed, breaded in breadcrumbs or in the wheat flour. Semi-finished product is fried in infra-red oven of chamber type in two-sided and two-phase mode during 10-12 minutes. The meat powder is obtained by thermal processing of meat steak with infra-red radiation energy in the chamber-type installation with density 8-12 kW/m2 during 12-15 minutes till temperature in the centre of the meat steak reaches 98-100°C.
EFFECT: obtaining the product with improved organoleptical, physical and chemical characteristics, it has increased food and biological value.
