PRODUCTION METHOD OF DOUGH PRODUCTS WITH FILLING FOR PREPARATION OF GINGERBREAD SEMI-PRODUCTS Russian patent published in 2008 - IPC A21D13/08

FIELD: food products.

SUBSTANCE: at first one prepares raw material to production, kneads dough and put portion piece on the band transporter. Then continuously movable portion piece of prepared bread is given to rolling zone, where with the help of rolling dough layer is formed with dough rolls. For receiving of stable geometric parameters of outputting dough layer linear speed of band transporter, giving portion piece of prepared dough to rolling zone, and linear speed of dough rolls rotation in rolling zone from conditions of overfeeding of dough to rolling zone. Then thickness of continuously movable dough is decreased with rolling, forming in rolling zone dough layer of stated thickness for further preparation with longitudinal cutting of dough, at least, two parallel dough bands. After that at each continuously moving dough band with stated in longitudinal direction pace one puts simultaneously filling, at least, for one gingerbread semi-product at each band. Filling is put along one of the ends shifting from its end and folding each continuously moving dough band with giving of each dough band with filling on two parallel band transporter. Continuously moving filling free part of dough band is lifted and dropped along bowed curve path on continuously moving part of dough band with filling, creating two-layered dough bands with filling. Lifting and dropping angles of curve path of moving of filling free part of dough band are chosen of the terms of gravity overlapping of dough band part without filling on dough band part with filling with simultaneously edges aligning, created with two layered dough bands with filling. Then from each continuously moving dough band with filling with the help of cutting to length one cuts dough pieces, from which gingerbread are prepared.

EFFECT: decrease of labour intensity of manufacturing process; increase of productivity and mechanisation level; improvement of product quality and raw materials economy; increasing of gingerbread expiration date; decrease of back waste quantity; provision of product unit weight stability; of filing distribution regularity and stability of geometrical dimensions.
