FIELD: technology of food products making.
SUBSTANCE: method includes grains cleaning from admixtures, steaming, drying, cooling, preliminary separation into flows according to size, fractioning and further peeling to produce finished product. Fractioning is carried out by means of sifted grain separation into 2 parts, one of which is sent for further processing, and the second one is returned to initial grain for repeated sorting in order to provide optimal height of grain layer in the sieve.
EFFECT: application of suggested method makes it possible to increase output of unground buckwheat and to reduce content of dirt admixtures in it by more efficient sifting of smaller grains from buckwheat fractions.
