FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular to confectionary production and can be used in technology of confectioner's goods production with functional additives for preparation of the goods with predetermined stable properties and structure, meeting modern food demands of a human being. Firstly raw material is prepared, prescribed components are mixed uniformly, additives selected from the variety are put into the mixture. The additives includes dietary fibres, vitamins, minerals, polyunsaturated fatty acid and perbiotics with preparation of mass with polydisperse particles, size of which ranges from 10-6 to 2.5×10-5 m in number not less than 90% from total mass volume, specific area of polydisperse particles is selected within 0.1-12 m2. Mass with polydisperse particles, the size of which ranges from 10-6 to 2.5×10-5 m in number 93-96% from total mass volume, and specific area of polydisperse particles is selected within 8-12 m2 is used during preparation of confectionary mass for functional confectioner's goods meant for preschool and school-aged children. And technology of functional confectioner's goods meant for mass consumption, preschool and school-aged children, people suffering from diabetes is developed; with uniform distribution of functional additives in the composition of confectioner's goods with predetermined stable composition, structure, as well as preparation of balanced confectioner's goods.

EFFECT: development of confectioner's goods for mass consumption as well as for people suffering from diabetes.
