FIELD: food industry.

SUBSTANCE: invention relates to food confectionary production, precisely to production method of candies on the basis of mass containing foam-forming raw material and chip coconut. The method includes preparation of sugar dextrose syrup, and for this purpose sorbitol, edible salt are added in sugar dextrose syrup during its preparation. The syrup is boiled down at 123-127°C till content of total solids is 92-94%. Aerated agent is also prepared, wherefore syrup, water and flavor ''Coconut'' are added into egg albumen. Sugar dextrose syrup is mixed with aerated agent with preparation of binding mixture, and then the mixture is whipped in turbo blend, heated by water with 85-90°C of temperature. Thereafter paste is prepared, chip coconut preliminary soaked in sorbitol is added in the paste as a flavor. Then the biding mixture is blended with chip coconut soaked in sorbitol with the ratio of binding mixture and chip coconut soaked on sorbitol as (1.0-1.2)(1.8-2.5).

EFFECT: quality enhancement of the goods and shelf life extension are ensured.
