FIELD: transport.
SUBSTANCE: invention relates to wine industry and can be used in pouring wines. Wine material is subjected to bentonite fining during mixing in a vessel subjected to acoustic oscillations created by hydro acoustic radiators. Then, wine material is filtered, pasteurised, packed up in the disposable cans sterilised as shown above. Cans with wine are transferred to pouring to degas oxygen of air from filled cans by ultrasound, to add nitrogen, to cork the cans, to carry out stepwise pasteurisation with a simultaneous washing of the can external surface, to dry the cans, to pack them into container and to place in storage. Cans pasteurisation and external surface washing are performed with temperature of water increased stepwise from 25 to 30°C up to 63 to 69°C with subsequent stepwise decrease in water temperature.
EFFECT: intensified pouring, decreased reject, improved organoleptic quality of wine in its long storage.
