FIELD: food products.
SUBSTANCE: invention relates to confectionary industry and can be used in technology of manufacturing candy glasses assigned for preventive feeding. Sand sugar is mixed with wheat and\or corn powdered water-soluble dietary fibres or polydextrose taken in quantity of 3-10 mass % of caramel mass. Obtained mixture is dissoluted in water with smooth warming up to 110-115°C until dry substances in the solution make 86-87%. Molasses is added to solution with molasses-sugar ratio (1-1.5):(2-2.5). Mass is boiled at 145-150°C till dry substance content 96-97%. Mass is cooled till temperature 85-90°C. Flavour and/or flavour substances are added. Caramel mass forming is performed on forming roller or on chain cutting and stamping machines.
EFFECT: expanded range of candy glasses; manufacturing of caramel with dietary properties by sweetness and calorie content decrease; increase of its quality.
