FIELD: chemistry.
SUBSTANCE: invention refers to fat-and-oil industry. Method involves evaluation of concentration difference for aromatic amine added to the sample in excess, and its residue after carbonyl compound reaction in vegetable and animal oils and fats and derivatives. Aromatic amine is introduced as acetic solution of aromatic amine, while the residual aromatic amine unreacted with carbonyl compounds is cross-linked by adding chloroform solution of n-nitrobenzaldehyde. Two sample solutions are measured for optical density in visible area with carbonyl value determined by their difference.
EFFECT: higher measurement reliability and accuracy of vegetable and animal oils and fats and derivatives analysis for carbonyl compound content.
