FIELD: food industry.
SUBSTANCE: invention concerns dairy industry and can be applied in production of vegetable milk powder products for nutrition of 1 to 14 year old children and adults. Method includes skimmed milk or caseic whey condensation until weight ratio of dry substance reaches 45-55%, with unclarified apple and/or pumpkin and/or carrot and/or beets juice condensed until weight ratio of dry substance reaches 45-55% to be used as vegetable component. Vegetable component is mixed with condensed skimmed milk or condensed caseic whey at 10-50°C. Obtained mix is dispersed at 40-50°C for 10-20 seconds before drying, to obtain fine 1-3 mcm mix. After drying, microgranulation is performed to obtain product with granule size of 10-20 mcm. Skimmed milk or caseic whey ratio to vegetable component is 50:10-80:40 respectively. Vegetable milk powder product of the following composition, wt %, is obtained: proteins - 11.514-29.620; carbohydrates - 55.65-69.746; fats - 0.277-2.837; mineral substances - 3.325-4.551; vitamins - 0.0178-0.0465; moisture 2.0-4.0; product solubility is under 0.98 ml of primary sludge.
EFFECT: improved product quality due to prevented lumping, enhanced wettability and solubility, possible use of product in nutrition of 1 to 14 year old children due to well-balanced composition, extended product range for instant child and school meals.
