SUBSTANCE: invention is related to the food industry, mainly meat and vegetable preserved food production. Preserves preparation includes cutting, browning in the melted fat and gritting part of carrots, part of parsley roots, celery and onion; cutting and frying in the melted fat potatoes; cutting and browning in metled fat the remaining part of carrots and parsley roots, blanching and cutting dried plums, cutting and freezing runner beans; browning in the melted fat wheat flour and mixing of the listed components under oxygen free conditions with tomato paste, acetic acid, sugar, table salt and black bitter pepper to prepare garnish; cutting, larding salt pork and frying in the melted fat beef; packing beef, garnish and bone broth, sealing and sterilising.
EFFECT: invention allows manufacturing of canned food with good digestibility.
