FIELD: chemistry; food products.

SUBSTANCE: invention concerns oil and fat industry. The method includes sample preparation comprising extraction of antioxidants from vegetable oil during 15 minutes by aqua isopropanol ammonia solution with concentration, 6.5 - 7.0 mole/dm3 at the ratio 1:1, centrifugation, addition of acidated sulphuric acid into isopropanol phase of bidistilled water till pH is 2-3 as well as addition of ammonia sulphate till solution is saturated, second extraction and centrifugation, separation of upper layer and chromatography of it by liquid chromatograph with UV-detector and wave length 270-274 nm by reverse phase method of high effective liquid chromatography and determination of antioxidant content by the formula: c = 100 c0/R r, where c - concentration of antioxidant in oil, mg/dm3; c0 - its concentration in extract, mg/dm3; r - ratio of initial oil volume and organic phase; R - extraction rate of antioxidant in the system - salt aqueous solution - isopropyl alcohol.

EFFECT: decrease of detection limit, enhancement of selectivity and application field extension.
