FIELD: food industry.

SUBSTANCE: method includes the stage of a chromogenic radical production by way of oxidation of 2,2'-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) with laccase, the radical recovery with vegetable oil antioxidants or a standard antioxidant in an n-butanol-propanol solution, measurement of the solutions optical density at 405 or 750 nm on a flatbed photometre and calculation of the total antioxidant activity of vegetable oil from the formula proposed.

EFFECT: definition simplification and reliability improvement.
