SUBSTANCE: method provides for extraction of orange zest by liquid nitrogen with separation of according miscella, artichoke and apples preparation, cutting and drying in microwave field at specified process parametres, artichoke roasting, finish drying of apples by convection method, mixing artichoke and apples as per mass ratio of 3:2, impregnation of produced mixture by separated miscella with simultaneous pressure rise, pressure drop down to atmospheric one with simultaneous freezing of mixture and its cryo-grinding in medium of separated nitrogen.
EFFECT: production of flavoured coffee drink using non-waste technology.
