SUBSTANCE: invention relates to technology of manufacturing coffee substitute. Method instant powder for production of girasol-herbal beverage provides for extraction of thyme by liquid nitrogen with corresponding miscella separation, preparation of girasol, its cutting, drying in microwave field at preset process parametres and frying, barley grains frying, mixing of girasol and barley grains in mass ratio 7:3, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost. Depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen follow.
EFFECT: method provides the possibility of preparation of instant powder for flavoured coffee drink according to nonwaste technology.
