FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved scallops. According to the preservation method scallops are put in jars, jars are filled with filling at 95°C, put in microwave oven for 120-130 seconds, repeatedly treated in microwave oven, sealed and matured in warm air chamber and cooled down.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
