FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Cucumbers are packed in jars; the jars are put in microwave oven for 120-130 seconds. Jars are filled with brine at temperature no less than 95°C, closured, reput in microwave oven for 90-100 sec. After that they are taken into hot air chambers at temperature 105-110°C during 8-10 minutes. After that they are cooled in steps in atmosphere air flow and sprayed with water during 20 minutes.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
