FIELD: food industry.

SUBSTANCE: invention relates to branch of food industry and catering trade namely to methods of production of bakery confectionary products namely dried crust products of toasts type. Dried crust products production method of toasts type includes maturating of baked bread and its cutting into pieces, drying, cooling, removal of extra fat and adding of food powder-like or taste and flavour additive in mixing drum. Frying of bread pieces is performed in warmed vegetable refined flavoured oil or deep fat. The cooling of products is performed on the open air at room temperature during 30-60 minutes. Extra fat is removed with help of centrifuge, after that food powder or taste-and-flavour additive is added to the mixing drum in quantity 1-4% of loaded products weight.

EFFECT: invention allows to expand products range by producing a product with different organoleptic and crisping properties, reduce quantity of oil in ready-made products, reduce energy consumption, increase storage time.
