FIELD: food industry.
SUBSTANCE: invention is related to food industry and can be used for manufacturing of functional bakery and pastry products. Dough is prepared by mixing of specified recipe components and food additive. After that dough fermentation, handling, proving is conducted and dough pieces are baked. Amniotic shell of pine nut grinded into particles size 0.01-0.3 mm in quantity of 3.0-15.0 wt % is used as food additive.
EFFECT: products biological value is increased; manufacturing method is simplified.
