FIELD: food industry.

SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Fennel is extracted by liquid nitrogen with miscella separation. Prepared yacons and rosehips are cut, dried separately in microwave field at preset parametres till residual humidity about 20%. Yacons, barley grains, acorns, nut kernels, fruit bones and soya are fried. Rosehips are dried by convective method till residual humidity about 5%. Yacons, barley grains, rosehips, acorns, nut kernels, fruit bones and soya are mixed in mass ratio 2:1:6:6:1:1:3 and put into cryomiller shell. The mixture is impregnated by separated miscella with simultaneous pressure boost. After the impregnation the depressurisation is performed and the mixture is frozen. The mixture is cryomilled in medium of evolved nitrogen.

EFFECT: product obtained from non-traditional raw materials has taste and aroma similar to flavoured coffee when brewed.
