SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of ingredients, extraction of cocoa husks by liquid nitrogen with relevant miscella separation. Then yacon is cut, dried in the microwave field at preset process parametres and roasted. Besides the method envisages cutting rosehips, drying them in microwave field at preset process parametres and additional drying by convective method. Besides the method envisages mixing yacon, rosehips, barley grains, acorns, nut kernels, kernels of fruit bones and soya. Also the method involves impregnating the obtained mixture by separated miscella with simultaneous pressure boost and pressure release until it equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.
EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology.
