FIELD: food industry.
SUBSTANCE: invention is related to food industry and may be used in production of bakery products with original treatment-and-preventive additives. Method provides for kneading of dough out of wheat flour, yeasts suspension, salt solution, ferment preparation Pentopan 500 BG, adding of bean flour and clover seeds in quantity 4-5% each of wheat flour weight.
EFFECT: proposed method allows to increase stability of shape and porosity of bakery product, decrease hardening level.
