FIELD: food industry.
SUBSTANCE: invention relates to food industry and biotechnology and can be used in winemaking, brewing, distilling and microbiological industry. Yeasts autolysate production method provides for destruction of yeast cell by fermentative processing before and/or during mechanical and/or physical action. Fermentative processing is performed with help of hydrolytic and/or proteolytic impact ferment during 0.5 to 25 hours. Mechanical and/or physical action is performed during 0.5 to 60 minutes.
EFFECT: method allows to obtain autolysate with increased degree of hydrolysis up to 60% and obtain end product of high quality with high organoleptic properties with increased food value when autolysate is added.
