FIELD: food industry and biotechnology.
SUBSTANCE: method for producing a yeast composition is proposed, including washing production medium from alcohol, beer, wine or baker's yeast selected at the end of fermentation, diluting them with drinking water t=5-8°C to cell concentration of 2⋅109 per cm3; then exposure to microwave waves with a frequency of 2450 MHz is carried out on water-yeast suspensions until complete destruction of cell membranes (100% dead cells). Additionally, the yeast composition of wine yeast is evaporated, dried, crushed, then jointly crushed with sublimation-dried grape pomace in a ratio of 3:1; and the yeast composition from baker's yeast is additionally evaporated, dried, crushed, then jointly crushed with bee pollen in a ratio of 3:1.
EFFECT: extension of the arsenal of methods for obtaining a yeast composition for use as a fermentation activator in the cultivation of yeast.
