FIELD: food industry.

SUBSTANCE: protein hydrolysate manufacturing method includes fermentative one-stage baker's yeasts biomass hydrolysate, following mixing, incubation at 45°C. Control and correction are performed till pH makes 8.3. Dry cattle pancreatine in quantity 0.14 g per one litre of homogenous yeasts suspension is used as enzyme preparation. The process is finished when amine nitrogen value makes at least 2.2%. Obtained hydrolysate is defecated at room temperature. Supernatant is decanted and preservation is perfomed. The method allows to obtain protein hydrolysate with following properties: total nitrogen (9.3±2.1)%, amine nitrogen (2.85±0.65)%, carbohydrates (0.04±0.015)%, free tryptophane (0.107±0.004)% nucleic acids (0.002±0.0005)%, vitamin B1 (0.000045±0.000003)%, vitamin B2 (0.000051±0.000004)%, vitamin PP (0.00086±0.00003)%.

EFFECT: invention allows to obtain protein hydrolysate.
