FIELD: medicine, in particular medicine microbiology.
SUBSTANCE: claimed method includes blending of soybean flour with water at water duty of 1:5.5-1:7.5; boiled or held at 70-90°C for 15-50. Mixture is diluted with water up to water duty of 1:13-1:15, alkalified to pH 7.8-8.2; fermented with pancreas or pancreatine for 3-6 h at 48-50°C. After fermentation finishing hydrolyzate is acidified to pH 4.2-4.5, boiled, filtered, filtrate is alkalified to pH 8.3-8.6; heated to 60-80°C, held for 15-30 min, cooled to 20-40°C, filtered, acidified to pH 7.2-7.5, concentrated and dried. Hydrolyzate of present invention is useful in culturing of wise microorganism spectrum.
EFFECT: accelerated method for production of high purity soybean hydrolyzate having high peptone content.
