FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Instant powder for producing flavoured coffee drink is obtained by extraction of tangerine peel by liquid nitrogen with corresponding miscella separation, preparation of yacon, its drying in microwave field till residual humidity about 20% at microwave field power providing warming of yacon till 80-90°C inside the bits during at least an hour. It is followed by frying yacon, barley and rye grains, putting them into cryomiller in mass ratio 2:2:1. Hereafter ingredients are mixed, obtained mixture is impregnated by separated miscella with simultaneous pressure boost to the value of corresponding vapour enrichment pressure at the temperature of impregnation and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen is performed.
EFFECT: obtaining new flavoured coffee drink according to nonwaste technology.
