SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. The method involves preparation of the recipe components, extraction of lemon zest by liquid nitrogen with the respective miscella separation, yacon cutting, drying in the microwave field at preset process parametres and frying, barley, oat and rye grains frying, mixing of yacon, barley, oat and rye grains, impregnation of the obtained mixture by the separated miscella with the simultaneous pressure boost and following reduction of pressure down to the atmospheric one along with simultaneous freezing of the mixture and its cryogrinding in the released nitrogen medium.
EFFECT: method allows for the production of new flavoured coffee beverage from unconventional raw material and prevent waste generation.
