SUBSTANCE: invention is related to coffee substitutes production technology and represents manufacturing method of instant powder for chicory-lemon drink. Cloves is extracted by liquid nitrogen with corresponding miscella separation. Prepared chicory; is cut, dried in microwave oven till residual humidity about 20% at microwave field power providing warming of chicory inside the bits till temperature 80-90°C during at least an hour. Lemon refuses are fried and dried in microwave oven till residual humidity about 20% at microwave filed power providing warming of lemon refuses inside the mass till temperature of 80-90°C during at least an hour and are dried till residual humidity about 5% by convective method. Chicory and lemon refuses are mixed in mass ratio 7:3, obtained mixture is impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: invention allows to obtain new coffee substitute with increased organoleptic properties according to nonwaste technology.
