SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method of production of aromatised yacon-apple drink consists in extracting black tea with liquid nitrogen and in separating corresponding miscella, in cutting and drying yacon and apples SHF field at specified parametres of process and in roasting yacon, in convective finish drying of apples, in mixing yacon and apples, in soaking of produced mixture with separated miscella simultaneously building pressure up, in successive dropping pressure to atmospheric with simultaneous freezing of mixture and cryo-milling it in medium of precipitated nitrogen.
EFFECT: facilitating production of new aromatised coffee drink out of non-traditional raw material by non-waste process.
