FIELD: food industry.
SUBSTANCE: invention refers to method of production of aromatized yacon-apple-black chokeberry drink. The method consists in extracting green tea with liquid nitrogen, in separating corresponding miscella, and in preparing yacon, apples and black chokeberry. Further the method consists in cutting yacon and apples, in their drying in field of SHF to residual moisture about 20% with power of SHF facilitating heating of raw material to temperature inside pieces 80-90°C during not less 1 hour. Drying of black chokeberry is also performed in field of SHF to residual moisture about 20% with power of SHF facilitating heating of black chokeberry temperature inside berries 80-90°C during not less 1 hour. Further yacon is roasted, and apples and black chokeberries are finish dried to residual moisture about 5% by a convective method. Yacon, apples and black chokeberries are mixed at weight ratio 10:9:1. Produced mixture is soaked with separated miscella; simultaneously pressure is built-up. Then pressure is dropped to atmospheric with simultaneous freezing of mixture; the mixture is cryo-crumbled in medium of precipitated nitrogen.
EFFECT: method facilitates manufacture of new aromatised coffee drink out of non-traditional raw material by non-waste technology.
