SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method consists in extracting of cinnamon laurel with liquid nitrogen and in separating of corresponding miscella, in preparing, cutting, and drying of topinambur and pears in field of SHF at specified parametres of the process, and in roasting of topinambur; in finish drying of pears by a convective method, in mixing topinambur and pears at weight ratio 3:2, in soaking produced mixture with separated miscella and simultaneous in building up pressure, in dropping pressure to atmospheric and simultaneous freezing of mixture and in cryo-crumbling it in medium of precipitated nitrogen.
EFFECT: facilitating production of aromatised coffee drink by non-waste process.
