FIELD: food industry.
SUBSTANCE: method involves washing girasol-sunflower, chopping it, pouring it with acidified water, treating it in microwave field until native enzymes are inactivated, extracting it at preset process parametres, sequential passing the extract through membranes with threshold of retaining of 6-8 kDa and 0.8-2 kDa with return of low-molecular fraction to the extraction stage, concentrating of the remained fractions by means of reverse osmosis, uniting the low-molecular concentrate with ground oil-cake to obtain gelatinising concentrate, photosterilising and packaging of the remained concentrate in aseptic conditions to obtain inulin-containing solution.
EFFECT: method enables to perform integrated processing of girasol-sunflower with complete utilisation of nutritional and biologically active substances.
