FIELD: food industry.
SUBSTANCE: invention relates to technology for complex processing of vegetables, namely girasol-sunflower. Method of complex processing of girasol-sunflower providing washing it, milling it, processing in the field of microwaves to inactivation the native enzymes, extraction with acidified water until the pH of the mixture is 5-6.5 with a ratio of phases 1:1 and the temperature 55-65°C for 30-40 minutes, followed by separation of the extract and the meal, consistent transmission of the extract through membranes with a threshold retention of 6-8 kDa and 0.8-2 kDa with low-molecular fraction returning to the stage of extraction, concentrating of the remaining fractions by reverse osmosis to the solid content of at least 15%, combining of high-molecular fraction concentrate with the meal obtaining gelating concentrate photo-sterilisation and packing in aseptic conditions of the remaining concentrate, which is a solution containing inulin, purified from accompanying substances.
EFFECT: method enables to implement complex processing of girasol-sunflower with complete recycling of nutrient and bioactive substances.
