SUBSTANCE: invention relates to the process of manufacturing coffee substitutes. The method provides for preparing the recipe components, extracting allspice using liquid nitrogen with correspondent miscella separation and cutting, drying in a microwave field at given process parametres and roasting girasol. Rosehips, apples and pears undergo cutting, drying in a microwave field at given process parametres and convective post-drying. Barley grains are roasted. The girasol, barley grains, rosehips, apples and pears are mixed up together. The obtained mixture is impregnated with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen.
EFFECT: invention enables to obtain a flavoured coffee drink using a waste-free technology.
